Rainbow Heart Cookies

Rainbow Heart Cookies
Ingredients
130g butter
140g icing sugar
3 egg yolks
1 tbsp vanilla essence
270g plain flour
Red food colouring/paste
1 tbsp water
Sprinkles
Method
Scoff!
Why not give them a go to put a little colour in the lunch boxes!

Rainbow Heart Cookies
Ingredients
130g butter
140g icing sugar
3 egg yolks
1 tbsp vanilla essence
270g plain flour
Red food colouring/paste
1 tbsp water
Sprinkles
Method
- Cream together the butter and icing sugar in a bowl
- Mix in the eggs and vanilla essence
- Sift in the flour and combine until a dough is formed. Add a little more flour if required; it shouldn't be too sticky
- Split the dough in half. Wrap one half in film and place in the fridge. With the other half add the food colouring/paste to create a bold red colour
- Roll the red dough out, on a lightly floured surface, to around an inch in thickness and cut out heart shapes approx 2 inches in length with a cutter
- Stack the hearts on top of each other using a little water between each to attach
- Remove the plain dough from the fridge, tear a strip off, roll in your hands to make a long and thin sausage and carefully place this in the V shape at the top of the row of hearts
- Continue to tear pieces of the plain dough off and cover the edges of the heart row completely - it should make a circular/large sausage once complete.
- Add a tiny amount of water to the surface of the cookie roll and cover it with sprinkles
- Wrap and place in the freezer for a few minutes until firm (or place in the fridge for a longer period of time if you are more patient than I am!)
- Remove and slice into circles around 1cm in thickness
- Bake at 180 degrees for 10 minutes-12 minutes
Scoff!

DeleteEmma, these look INCREDIBLE! What a show stopper - I watched a video of someone making rainbow heart ones the other day, but honestly these are just as effective and nowhere near a complicated - they really look so cool. I must give them a try sometime! x
