I had two bags of granola hiding away in the cupboard fast approaching their expiry dates, and a packet of chocolate, so I decided to use them up while baking over the bank holiday weekend. The Mini Mes were happy to get involved while it was raining outside so we ended up with an activity to keep us occupied and some treats to eat at the end - win win!
You will need

120 ml milk
2 medium eggs
4 tbsp sunflower oil
4 tbsp honey
1 tbsp vanilla extract
240g self raising flour
70g granola (we used Udis gluten free vanilla and almond flavour) and some more to sprinkle on top
12 pieces of chocolate (we used Dr Oetker extra dark chocolate)

Method
- Preheat the oven to 180 degrees and pop 12 large cases into a muffin tray (we used a mixture of paper and edible ones)
- Mix together the milk, eggs, sunflower oil, honey and vanilla in a bowl
- Sift in the flour and add the granola, then combine. Feel free to add in some fruit at this point if you wish to. Raisins and apple go nicely
- Place a tablespoon of mixture in each muffin case and place a piece of chocolate on top
- Split the remaining mixture between the muffin cases ensuring the chocolate is covered
- Sprinkle a bit more granola on top
- Place in the oven for 20 minutes until golden
- Scoff!
They are quite dense so they will really fill you up. Each is around 200 calories.
