We were really happy to see the return of The Great British Bake Off just a few weeks ago and we've been inspired to make a few recipes of our own based upon the theme from each episode. We've made a moist Madeira Cake and a variety of breads but dessert week is always my favourite. I have a very sweet tooth and this cheesecake we made is filled and topped with chocolate sauce, caramel and chunks of Mars. Gooey and delicious!
Ingredients
For the base
350g biscuits (we used chocolate digestives)
130g butter
For the chocolate sauce
2 heaped tbsp cream
60g chocolate
For the caramel
2 heaped tbsp cream
20g butter
20g brown sugar
For the filling
500g soft cheese
100g caster sugar
3tsp gelatin powder diluted in 50ml boiling water
300ml double cream
80g Mars Bar (approx. 2 bars)
40g Mars Bar to decorate, optional
Method
- Melt the 130g of butter in a pan on a low heat
- Crush the biscuits in a bowl until they become crumbs (we use the end of a rolling pin to do this) and pour in the butter, mixing it until the biscuits are fully coated
- Place the biscuit and butter mix into a 20cm tin with a loose bottom, spreading it out evenly, and pop it into the fridge to set (around 40 minutes)
- Whisk the 300ml of cream until soft peaks are formed.
- Take 2 tablespoons of the whipped cream and place it into a saucepan with 20g of brown sugar and 20g of butter
- Melt over a low heat until smooth in texture and set to one side to cool slightly. This is caramel
- Take another 2 tablespoons of whipped cream and place into a saucepan with 60g of milk chocolate
- Melt over a low heat until and set to one side to cool slightly. This is sauce
- Mix the gellatin and boiling water together in a measuring jug and set to one side
- Cut the 2 Mars Bars into small pieces
- Mix together the soft cheese and caster sugar in a bowl, add the chunks of Mars Bar and gellatin and mix again, immediately
- Add the remaining whipped cream and fold it through evenly
- Add a third of the cream cheese mixture on top of the biscuit base
- Spread over a third of the sauce and a third of the caramel
- Repeat twice until everything is used
- Use a fork to marble the final layer of sauce and caramel
