Variety is the spice of life and this comes down to sandwich fillings too, apparently. The Mr loves a nice mixture for his lunch so I decided to make haslet as an alternative to the chicken, egg, tuna mayo etc that he would normally have between two slices of bread. It was a real success and the Mini Mes have enjoyed eating this too!
Ingredients
450g minced pork
1 onion, diced
140g breadcrumbs
1/2 tsp chilli powder
1/2 tsp chilli flakes
1 heaped tbsp sage
Lard for greasing

Method
- Preheat the oven to 180 degrees and grease a loaf tin thoroughly with the lard
- Mix together the pork, onion, breadcrumbs, chilli and sage in a bowl until everything is evenly distributed
- Place the mixture into the loaf tin and press it in firmly with the back of a wooden spoon to compact it well
- Cook for 90 minutes and use a skewer to ensure it is cooked throughout before removing
- Leave to cool and slice before serving
- Scoff!
We love this in fresh rolls with a smear of mustard.
